Fearless Fermenting
By, Carolyn Thomas
In this presentation, Carolyn Thomas takes the mystery out of vegetable fermentation and shows you how simple, and safe, it really is. She reframes fermenting as “bacteria farming,” where your job is simply to create the right conditions for beneficial bacteria to thrive while keeping spoilage at bay. With five clear, confidence-building rules, you’ll learn how to ferment garden vegetables using basic kitchen tools, quality salt, and straightforward methods like pour-over brine or dry-salting.
Carolyn also walks through what healthy ferments look, smell, and taste like, how to troubleshoot common concerns, and how to make fermented foods more approachable for families. From garlic and dilly beans to sauerkraut and carrot sticks, this session will give you the clarity and practical know-how to start fermenting your harvest without fear, and with delicious, nourishing results.

Carolyn Thomas and her husband, Josh, lives on 40 acres in Idaho where they grow, preserve, and prepare most of their own food and herbal medicines right on their own property.
But she didn’t always know how to ferment the foods that keep her family healthy and strong. In fact, it took her years of study to gain this priceless knowledge! If you’re like her, you didn’t have the chance to learn these important skills from your mother or grandmother.
That’s why she loves teaching about fermenting - It's the kind of insight she wishes someone had given her when she was a young mom trying to move away from purchased (or processed!) foods in order to provide delicious and healthy food options for her family. You can be a fearless fermenter too!
